Ingredients: 200 g white flour, 1/2 sachet baking powder, 110 g butter, 150 g sugar (preferably brown sugar), 230 g plain yogurt, 1 cup blueberries/berries, 3 eggs, a pinch of salt, 1 sachet of vanilla sugar.
Preparation:
Step 1: Preheat the oven to 180 degrees C. In a bowl, mix the butter (at room temperature), gradually adding the sugar. When the mixture becomes a frothy cream, add one egg at a time and a little of the yogurt, then continue mixing.
Step 2: Mix the flour with the baking powder and vanilla sugar, then gradually incorporate them into the butter and egg composition. Add a pinch of salt. Grease and flour two trays and pour a quarter of the dough (by eye) into each tray, sprinkle with blueberries (drained of excess liquid!!!) and cover again with dough. Finally, sprinkle blueberries or berries on top of the cake.
Step 3: Put the cake in the oven and bake until golden brown. Test with a toothpick, if it comes out “clean” it means the cake is baked.
Step 4: I look forward to your impressions and possible ideas to improve, for example, I would add some cereal flakes, in addition to blueberries. I’m thinking of replacing the blueberries with candied fruit, for example apricots. I wish you good appetite and good luck!!!
